set VCPKG_DEFAULT_TRIPLET=x64-windows

You can use one of following command for example:

vcpkg install ffmpeg

If you want to build only release build, adjust vcpkg configuration according to instructions in here: ​https://stackoverflow.com/a/52781832/2338477

and build using command line like this for example:

vcpkg install ffmpeg[ffmpeg,avresample,avcodec,avformat,avdevice,avfilter,swresample,swscale]:x64-windows-rel
vcpkg install ffmpeg[ffmpeg]:x64-windows-rel

[ffmpeg] will build ffmpeg executable.
